So far... the Vesper. I don't really like any of the assault rifles so far. I want to unlock the M8.
I like the Kuda weapon. 
However, most of the assualt weapons remain slow, and a little heavy (meaning slower ADS).

What are the differences between the E3 version and the BO3 Beta version?

For the HVK-30, yes. It's maximum range and damage were lowered

The XR2 i think the HVk-30, Kuda and Razorback with will be changed in the final version.

Well now that the game is released I would say that the best assault rifle so far is the first one. (The most recent I've unlocked is the man-o-war.) My favorite gun by far though is the 3 round burst sub machine gun.
