I realize that I probably am going to offend you here. And I apologize for asking.
Did you do anything related to boosting, or cheating? If so, they [activision] probably reversed your prestige progress. Robert clearly said that they're going to be stomping their feet on these types from MW3's launch forward. So this means, no lagswitching, boosting, cheating. At all.
If not, it's possible that the [elite] server has been having some troubles. Your stats are sent to a server before it's saved globally, even though that your PS3 is reading your stats. It goes both ways. If your stats aren't read to the server, then whatever you have in your hard drive wasn't saved.
So, everytime you finish a match, STAY in the lobby. Your PS3 needs to save the MW3 progress, THEN send it to the elite servers.
Even if that doesn't work, don't exit the game via XMB, rather, do it via the MW3 game menu - exiting back and forth between the menu and the multiplayer menu will save your file.
This works in COD4, and it works in MW2, possibly works in MW3.

Just to let you know, that the most recent patch update, 1.06 addresses this issue.
